Can most people tell the difference between a “J” colored diamond engagement ring and an “I” colored one?

No, most people would not be able to tell just by looking at a single diamond not compared to others, especially as you are talking about such a slight difference in colour grading that you get between I and J. (However you always find some people who are experts and will be able to tell)

Most won’t be able to tell.
Probably a good idea to have a yellow gold mount. That will further camouflage the slight bit of colour in an I or J stone.

G/H/I/J will all look virtually the same to the naked eye. Since they are nearly colorless I think you can have any color setting you want.

YES! J is when you will start to see yellow in a stone, even more so if it is set in white metal like white gold or platinum. I have worked in a jewelry store for a long time and I would never buy a diamond with a color below an I. Most diamonds with a color of I will not show any yellow, but you will def. see it in a J color stone. If that doesn’t bother you go for it, otherwise try to find a stone with better color. There is a reason places like Tiffany’s will not carry stones with a color grade lower than an I.
