The general rule… if it was a gift given at a holiday as a Christmas, birthday, or anniversary gift, it remains a gift and is hers.
If it was given for no reason, other than the promise, it is yours once she breaks the promise.

Nope. A gift is a gift. It has no expiration date or obligations.

If it had been an engagement ring, she would be required to give it back. That would be a gift of condition.
Since it was a gift and no condition is truly attached, then she is probably not obligated to give it back.

Legally, it is a gift, and hers to do what she pleases with.
Maybe you can buy it back when she puts it on eBay
What would you do with it, give it to the next girl? She will be happy to have a used ring!
Or do you just want to punish her somehow by not having a remembrance of when times were good?
